Narrow tires are more prone to snake bite flats.

Only if underinflated. But any tire is prone to snake bites if underinflated.

OP update #2 :

As mentioned, moving from 70 to 50psi gave a more pleasant ride, but today I went down a little more, around 45 psi.

The difference was massive. 70 down to 50 was good, 50 down to 45 was absolutely amazing, the ride was vastly smoother.

All I can think of is that I'm quite light, 62kg (about 162lbs) and so my weight was not enough to make the most of the tire at 50psi, it was still able to stay fairly rigid, but 45 is below a threshold for my weight.
​Maybe I'm just thinking about it too much though.

As before, I wasn't monitoring speed/performance but i I didn't feel any slower than before.

Anyway, TLDR, 45psi is the right pressure on my bike with my tires for a 62kg person to have a very comfortable ride that doesn't feel any slower than at higher pressures.

In regards to tire pressure and flats, for years I would go 120 psi in my 700x23 road tires because I thought more pressure was better. I dropped to 100 psi a few years ago and flats have almost disappeared.

That pump with the red cloth is a WalMart POS. My last tour my pump threads quit on me. So I was stuck in a small town and bought that.
The hose fell apart in 2 hours. LOL. I had a teeny little staple I couldn't see and was trying to pump every 5 miles.

Don’t be so quick to judge. That pump looks a lot like a Medai pump hose and head. Until the leather wore out, it was the best pump I ever owned. I’d still be using it if I could have found a leather for it. I’ve been through a dozen pumps since that one wore out 20 years ago.

I have 35mm tires and they feel and seem to narrow. I hope I get used to them.
