8spd to 11spd cassette?
Looks like the CS-M8000 Shimano cassette is supposed to fit on a hub that is normally an 8spd. Has anyone tried this on a folder?
The one thing that scares me about it is the RD requirement. Is it possible to get one compact to go along with the smaller bike? Or maybe swap out the idler part with whats on the bike now to the mechanism of a compatible 11spd shifter?
For reference - the bike I am looking at modifying here is a Dahon Mariner D8.

Being a folding bike doesn't limit you from using an 11 speed cassette. Shimano mtb 11 speed cassette, and I think SRAM and Sunrace too, can fit on an 8, 9, 10 freehub.
I don't understand what you mean about changing an idler, but a GS length RD cage is ok on 20" wheel.
The mtb 11 speed cassettes start at 36t though, and 40, 42, 46t. I don't think there are any that are 34t or under, which would require an 11 speed freehub.
You'll have to find a GS length RD with the correct capacity for 36, 40, 42, or 46t, whichever you choose. But you're going to have very big jumps in gears. If you want closer spacing, you should think about using double chainrings instead.

I fitted a Shimano XT (Mountain bike range) 11 speed 11-40 to a 9 speed hub all fine. I needed a new XT rear derailleur (medium length) and new shifter. I didn't find the jumps between gears too huge but the RD does get quite close to the ground. Fine on dry conditions and road but I have dragged it through a muddy puddle and needed to clean the chain. It gave me a much lower bottom gear for brutal hills and touring.
