At planet level, the business case for keeping and old, good quality bike on the road is positive. Meaning that the cost of the resources needed to make a new bike far outweigh the cost of getting some nice parts on CL or eBay.
On a personal level, not so much. That's something we need to fix, methinks.

The nostalgia is hardly foolish....it is apparently a part of your past that is meaningful and has pleasant memories and feelings attached. It's similar to car buffs I have seen and met that purchase a vehicle from their younger years for far more than you spent on your road bike project. You have the immensely added benefit of a healthy hobby and the joy of riding. No insurance, no maintenance, no jealous keying, and so many more negatives. I think your project and your dedication to a pure restoration is admirable. Ride on, enjoy, and throw away those receipts!!
