A buddy of mine races his bike and gets stuff from raffles all them time, he gave me some Origin8 Elimin8tor folding tires in a 700x28. With the weight of me and the bike it's roughly 230lbs and a tire pressure calculator says I need 104psi in the rear but the max rating on the tire is 87psi. 87psi just seems way to low. Could I safely add the extra 20psi?

You won't need anywhere near 104psi in the back tire. I runs 28s exclusively, and have never run more than 85psi (and when I started riding, bike + rider weight = 265lbs.) I'm now a combined weight of 213lbs, and run 84psi F/R with Michelin Pro4 700x28-- but have run as low as 65psi in the rear on Schwalbe tubeless.

Start at 85psi for the rear, see how it feels.

You are probably safe at 104 psi but here's what I would do:

Inflate your tires up to 87 psi and ride it. If you find that you are getting frequent "snake bite" flats with 2 parallel slits, ease the air pressure up. If you don't (my bet) leave well enough alone.
