With little more to go on than a " 7 speed gear shift" all you will get is a bunch of guesses

How old is the bike? How old is the cassette or freewheel? How old is the chain?
Have you replaced any parts lately?
When is the chain skipping? Only when starting, or whenever you push on the pedals hard?

I find this happens a LOT on 1x7 setups with megarange freewheels and Tourney rear derailleurs.
Getting a non-mega freewheel and removing some chain links can help some.
If that's not your setup then it could be something else. Too long chain, misaligned derailleur hanger, too-weak derailleur springs...

To help us troubleshoot, can you add a little clarity...
By 'sprocket', do you mean a chainring on the crankset or a cog on the rear wheel?
When the chain 'jumps', does it derail off the side of the 'sprocket', or skip along the top of it, disengaged?
If the chain is derailing at the crankset, what kind of crankset -- single, double, or triple? (In other words, how many chainrings/sprockets are there on the crank?)
You're not shifting while the bike's stopped and then trying to pedal, are you? That would immediately derail the chain in an attempt to shift as soon as you started pedaling. You need to shift while the bike's moving. (Or at least the bike's drivetrain needs to be moving, such as if the rear wheel was lifted off the ground.)
If you could give a better description of the bike and its components, or at least a brand & model, it might help us visualize what components you have and what could possibly be going wrong.

With no other information, I'm going to infer from the question and the way it was posed that there has been little or no maintenance performed on the bike. So most likely, worn chain and cogs.
