I have been wanting to become reacquainted with salty, smokey Virginia country ham. I looked it up and found a deal on 5-6 oz packs of slices for $44 delivered from a place called Smithfield Market. Not cheap, but not a kidney either for an occasional treat. It is cheaper in larger quantity, but I like the idea of the separate packages to preserve freshness, and I didn’t want too much anyway.

You guys know how I feel about biscuits. And there is nothing better on a biscuit than country ham. Not prosciutto. Not Serrano. Virginia ham and biscuits is the authentic pairing. The only downer is not being cooked, the slices have to be fried. But I guess that just makes them better.

I have some fig preserves we picked up last time we were driving through Breaux Bridge, LA on the way home from New Orleans. I cannot think of a more ideal condiment to set off the ham and biscuits than fig preserves. The reason sugar was invented.

Should have the ham next week. Stay tuned.

We go to Smithfield, VA every other trip to the in-law's or so. Nice little town, some cute antique shops and cafes. It's about an hour away and, most importantly, the drive includes a ferry ride across the James River (this is a big deal for the kids).

I have had ham there. It was ham.

I was just able to squeeze in a metric during the time allotted by my wonderful wife this morning. Felt great to ride the road bike after a couple weeks of nothing but the gravel bike.

I am unsure of whether or not my road bike would have been beaten up by a fixed gear, though.

OMG, I got the UP steam schedule wrong yesterday. Steam is rolling through Laramie around 2:30 MDT TODAY.

They are generally not good with cats, or anything that resembles prey. Otherwise they’re pretty good dogs.

I mean, did you see my average speed? If not for slowing down for the elderly and the children around the lake, as I padded my mileage for those last few Ks, I surely would have managed 18+.

Busy Saturday. Early rise, did a 64 mile club ride...it was wet and gritty and messy but a ton of fun. Came home and mowed the lawns, then out to Korean dinner and grocery shopping. All good.
