Seafood gumbo, redbeans and rice. Two of my favorites for large gatherings. Plenty of carbs in the rice and a little protein in the seafood and beans. Yum!

Spaghetti + meatballs with some chocolate milk. Hershey's single-serving size cartons are great.

When and where is the event? Lots of cold fluids if it's hot, hots of warm comfort food if it's cold.
I've finished a few rides in serious "bonk". Some of your longer route riders may experience that. When bonk happens, I don't care what the food looks like, I gobble everything in sight as quickly as I can.

This^^^ E.g., Nothing like eating hot-as-magma lasagna after a ride when it's 90 and humid out. Been there. Done that. Didn't pre-register so I didn't get the event t-shirt.

No joy; they'd bought a bunch of boxed lunches: a cold sandwich and maybe a bag of chips or something. They didn't even have hot drinks. I'd have been truly miserable except that I'd brought a change of clothes, so I had something dry to wear.
Don't do that.

Most California rides I do serve tri tip, chicken, or burritos (chicken or veggie). I've also had pasta and salad too. Don't forget the beer. 805 Beer was a sponsor at the Solvang Century one year. Since my ride number was 805, I asked if it would get me a free beer since I was promoting their product all day, no deal. $2, same as everybody. We had an In-N-Out burger mobile kitchen truck at a couple of rides that was very popular with the carnivores.
