Raleigh Pulsar - new wheels? Recommendations

Raleigh Pulsar - new wheels? Recommendations
Hello,
I bough a 25" Pulsar and am looking to restore it to former glory, but perhaps a slightly more modern version of. The wheels currently are the original steel wheels and are a little bent out of shape.
I would like to replace these, but am completely new to the cycling world (thanks for having me) and would like to ask the forum for a little advice. Happy to replace with something newer, but of would like it to look thoughtfully put together.
Being 6ft 8 I think the seat might also need a boost. I was also offered a Raleigh Stratos - the frame was bigger still, but the wheels were 27" which I was told is difficult. The Pulsar's are 700.
