Deore 10sp RD with Shimano 10sp Brifters

So I have the combo above, but I'm not getting the full range of shifting. I've only got enough pull for 8 sprockets.

Not compatible. 10 speed road and mountain components use different cable pull amounts. A 9 speed Deore rear derailleur will be compatible with that shifter and will shift all 10 speeds despite the 9 speed label.

Amazing. Don't suppose an 8sp Deore would also do the job?

Yes.
Shimano derailers are amazingly interchangeable 6-9 speed.

That should be RDER's. Fronts have different cable pulls between mountain & road.

An 8 speed would probably work, but has a slightly wider cage then 9 speed, which would be a better choice with the even narrower 10 speed chain.
A Tourney level has the same cable pull, but I'd expect sloppier shifting with the higher cog counts.

You can use this chart to find the correct rear derailleur "pull ratio" for your 10sp shifters. You'll need a 1.7 PR derailleur for 10 speed. Just make sure you include the proper cage length for your gearing. https://docs.google.com/spreadsheets...#gid=847158527

Thank you - almost bought a Tiagra RD... phew

The 8sp Deore RD kinda works but I have some slow changes on the smallest sprockets on the way "down" from the larger sprockets.

That is often indicative of cable friction. Have the cables been changed?

On one bike I have an 8-speed 105 GS rear derailleur (RD-1056) on an otherwise all 10-speed drivetrain (crank, shifters, cassette, chain) and it shifts just fine.
