For me I would get the 2020 without question having owned a 2019 SL6 and traded up to a 2020 SLR7.
2020 does away with the BB90 (probably the most disliked BB design in recent history) for the T47.
2020 will fit a slightly larger tire than the 2019.
2020 has downtube storage for flat kit and multi-tool. Thought it was gimmicky but turned out to be on of my favorite features.
2020 seat post design I like better than the 2019.
2020 has much cleaner cable routing.
Nothing wrong with 105 group. Probably the sweet spot for price/performance and will serve well for years. While the 2020 is a little heavier than the 2019 for me the added features more than make up for the slight weight gain. If weight is an overriding concern the Domane probably isn't the bike you should be looking at anyway. I do like the Ultegra hood design better but not enough to sway the pick for me.

The weight difference may be 2 lbs but even the lighter bike ain't light.
Newer version is a better choice between these options

See, this is what I was thinking as well but the opportunity to get an Ultegra group set, for a few hundred more, is enticing. I’m not much of a weight weenie but it is over 2 lbs more. I figured I can get new wheels anyways to shave off a few. Personally, I wanted to wait till the 2020’s go on sale later this year but I saw Trek has now updated this years model and calling it the 2021’s. So I’m guessing that they are just going to roll this over and we’re probably not going to get a sale for awhile.
