Do you mean how long is a "Sprint" Stage ?
Or how long do they actually sprint ? They crank it up with about 200 meters to go.

Mostly the same in the 3 grand tours. They have a lead out train. The other two grand tours also have a lead out train. But having a team focused on leading you out helps. Hard to say where the sprint starts. Maybe 200M to go?

I see sprints mid-stage marked with 2 green arches between the 2 points are given for fastest riders. What is an average distance between the 2 gren arches?

There's a lot of variety in placement of intermediate sprints. I don't think an "average" placement has much meaning. I think it's rare for a stage to have more than 1 intermediate sprint.
Intermediate sprint points aren't worth a lot, and often a breakaway has taken the top points, so the green jersey contenders mainly focus on the finish.

To put a little finer edge on it, as mentioned above, 200 meters is a general guideline for launching your sprint.
However, that varies by circumstance, i.e. whether the sprint is uphill or downhill, headwind, or tailwind, is it a mass sprint, a few riders, or two up, when your opponent launches, and your own physiology.
That said, the 200 meters is about 20 pedal strokes in a 53x11 gear.
A former team mate of mine, who was a national champion level track rider, taught me a trick for figuring where to launch your sprint. Go to the finish line of the race, figure the gear you'll be in, based on wind, and the slope of the road. Then pedal backwards from the finish line in that gear 20 strokes. Where you end up is where you should be looking to launch your final effort.
