went with a 1 x 11 mountain bike build (its a cyclocross bike) with drop bars and a MTB shifter but with a traditional brake levers.

You might look at some of the Microshift bar end shifters, in either Road compatible or MTB compatible.
I thought the RS-10 was 10 speed, and the RS-11 was 11 speed, although perhaps Shimano has messed around with the numbers a bit.

After reading this thread now interested in building some light carbon bike. I have a full Ultegra 6700 that can take off from a bike I just built some 2 months ago...
Yesterday I was looking at eBay for some cheap carbon wheelset - there are some for 300 bucks shipped and sub 1500 g.
Does anyone have experience with the made in China (mainland) wheelset?
If I go a bit higher, there is some from Taiwan too.

If it comes to <16lbs kudos and even if it's a bit more it's still a great build. Having done a similar (road) build and got to 15.5 lbs for $1300 (although I built more to low maint/long life than weight) , I know how hard it is but I found I added almost a lb to my "excel" build compared to "as built" as everything just weighed a bit more than advertised.

He's probably still trying to figure out why it weighs 18.5 lbs after he built it up.
Looks like OP was going off manufacturer stated weights. These usually don't reflect reality.

still want to see the stem that came with the frame which supports a 25.4mm bar as thats an extremely odd setup for a modern frame.

Use my own weights of my kitchen scale. Interestingly some manufacturers weights were too low some too high. Ended up coming in at 16.05 pounds. I think it was due to the cables weighing more than I thought.

It's comfortable, for me, up to 80-100 miles anyway. That or a cheaper version might be a way to make it even lighter for cheap.

Mine doesn't beat the weight or the price of the OP's, but I'm moderately proud of it as a bit of a budget build.
7.3kg total weight. Cost £750 but that's with me already owning the shifters, RD, wheels, bars, stem, saddle from my previous (now winter) bike.

I saw the frameset for sale- it was a legit deal.
