I have the same bike, purchased it in April, 2020. After riding a month or so with my wife, who was riding an FX 3 disk. I changed out the tires to 35mm H2s. Picked up about 2.5 mph. This worked out well, as my wife is a much more experienced rider than I. I was holding her back.

I also have been trying to decide between the FX 3 and the Verve 3. I have also entertained the thought of the FX carbon 4, but I believe that thought is over since its more than double the cost of the FX 3 and Verve 3. Does anyone know what the widest tires that will fit on the 2021 FX 3 is? I do not do any road riding. 85% is on crushed limestone rail trails, with the occasional paved rail trail. I called a dealer and got put on a list for an FX3 when they come in, but now am thinking I might change that to the Verve.

That Verve blue is just a killer looking bike.... It should be fine!
Trying better tires, in say, a 700 X 35 size will reap you big rewards. Like a Schwalbe Marathon Supreme.

Instead of looking for the widest possible tires for an FX3, why not grab the Verve 3 which comes with 700 x 45 tires? I’ve got the Verve 3, and absolutely love it. Tremendous, versatile bike that’s great on any surface. Additionally I’ve heard from more than a few riders that you feel every off-road bump with the FX3.

My 2019 Verve 2, with over 10000 kms on it.
Replaced the seat and handlebars and added the fenders and back rack right away.
Recently replaced the rear rim for the second time, under warranty, this time upgrading to Mavics front and rear with a monetary add from Trek.
Really like this bike!

Yeah, the 2016-2020 Verves aren't all that different from traditional bikes with relatively flat top tubes. The seat tube angle is more relaxed (not as vertical), and the head tube angle is also a little more relaxed. And small differences usually add up in terms of feel (to make the bike feel more different than it is). The 2021 Verves have a longer head tube and a taller (and much more raked) top tube -- they're closer to the DS now in terms of overall layout and dimension, whereas they used to be closer to the FX before the 2021 change.
I'd like a 2019-2020 model with disc brakes and a 650b wheel swap (to run maybe up to a 2.5" tire).
