French threaded hub rebuild?
I found aN NOS 40 spoke Mavic rim for my touring build. Plan to run 40 rear and 36 front. 36 spoke hubs aren't hard to get. Unfortunately 40 spoke hubs are:
a) very rare
B) very expensive.
Found some used in UK for not bad money but since its private sellers, shipping is very very high.
Bertinjim has one - but it's French threaded. Next rabbit hole would be finding a wide range French freewheel which might be hard.
My question is:
Can a French threaded freewheel be stripped down and rebuilt using standard ISO cogs taken from readily available standard freewheels.This would allow a custom built wide range freewheel.
Is this possible???

What about a Sturmey Archer AW with 40 holes? Those are pretty abundant on ebay, pretty trouble free and thence suitable for touring.

I wouldn't build a new wheel with a French threaded hub.
eBay is likely your best bet. There's this specialized cartridge bearing hub for example:

Those are really good hubs. I've used them extensively. It is bolt on but what the heck the price is decent.

I agree with bikemig about building a wheel on a hub with an obsolete freewheel thread. Why paint yourself into a corner?

Your problem will likely be finding a decent metric thread freewheel. Once found, sprockets from comparable freewheels can be swapped onto the metric body; e.g. standard SunTour Pro-Compe sprockets will fit on a metric-thread Pro-Compe body, sprockets from a standard Atom freewheel will fit on a metric-thread Atom body, etc.
Another option would be a 40-hole tandem hub. Not cheap, but these can take modern cassettes:
