Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Sure, there are often several tiers (some really offer too many options, tbh) and pricing can vary quite a lot depending upon length, steel, handle, construction, etc (and aren't things typically discounted at military exchanges?). Everybody is going to have different priorities and preferences, of course, but something along the lines of the Wusthof Classic level of things is what most could reasonably consider to be a lifetime purchase.

I'm a big fan of Japanese knives, as is Bah Humbug. My daily drivers are a 240mm Yoshikane SKD Tsuchime gyuto and a 180mm Mazaki white 2 petty. I still keep a couple of ze Germans around for beating on stuff.

Just looked them up. I probably paid more than I remember. The quality level is about right for me and I use them daily.

I do that all of the time. About a year ago, I realized that my pocket knife, the one that I'd had for 10 years and had just been stabbing in to the earth as I cut away some landscape fabric, was about $120 new. Oh well. It sharpened back up fine, but some of the black finish is gone, daddy, gone.

I'm sure there are some good ones, but I'm not aware of any of prominence. In fact, one of the scandals in the knife world is a certain manufacturer (with outsized social network marketing) passing their Chinese knives off as being Japanese.

My little Victorinox would cost about $40 to replace. I think I've had if for 30 years.

Just looked at them again and they're also obviously different brands.

I've had a Victorinox Swiss Army knife for about 20 years, my friend gave them to his groomsmen, though it was lost for about 5 years. It's fine, but if a pocket knife can't be easily opened with one hand, I'm not going to use it too much.

I carry a Haus for my daily pocket knife. Its been 5 years now. Was a gift/prize from work. No idea of its value. Probably < $5.00. Serves its purpose.

An old girl friend once gave me one of those Swiss Army knives with a million and one functions, several of which would be needed in doing a motor job on a radial aircraft engine. An impressive piece of machinery - the knife, not the motor.

When I take a knife with me it's just an Opinel No 8. Cheap, light. cuts ok. I tend to only carry a knife when hiking though.

My wife carries that one hiking - perfect for slicing apples. I carry the Kershaw for fending off imaginary beasts.
I also do not normally carry a knife unless I am hiking.

Mine is mostly used for opening boxes - demanding work. At least I've gotten the wife to refer to it as "the shank."

"What are you looking for?"
"The shank."
"Oh, here you go. Amazon delivery?"
"Yeah."
