It looks better when my old ratty pedals and clamp-on bottle cages aren't on there

A complete build is really a smooth sailing thing. If all the parts and fasteners are at hand. That is not the case today. So far I've found everything I need but it's been slow going. But the hard part is done. It's down to connecting brakes and derailleurs and tuning things up. Oh and pedals.

how? I really tried to keep my heart rate down, coasted on anything that would allow me to not pedal and still roll forward.
I guess my speed sometimes still krept up, but I keep my cadence really high, maybe too high? I was trying not to put pressure on my legs if that makes any sense.

LLS hasn't ridden more than 20 miles in the last month. Today, she was a half mile ahead of me at the 10 mile mark and shamed me. Felt sorry for me, and got me a carbon wheelset. Pretty excited!

As an aside, who decided you should either be in Z2 or Z5? Most of the gains I've made this year were made while going hard every ride.

I'd be tempted to go with bar-mounted bottle cages. SS bottles in there for fancy days, but regular squishy bottles for most rides for convenience and proper hydration's sake.
