Building a Gravel Bike looking for advice on the Drivetrain
I am building a gravel bike around a Lemond Poprad steel frame. I have a Shimano Ultegra 6500 series 2x9 and a Dura-ace 7700 series 3x9 at my disposal that I could use for the build. Having trouble deciding... Looking for opinions. Thanks.

Cool project! You are probably going to need a new rear derailleur, either way. A 9 speed mtb that will handle a 32 or 34. The 2X9 standard double crank would not be useful, so figure on a modern compact or sub compact if you can find one. I got a previous generation Sora 50-34 and replaced the 50 with a CX50 46T. Very inexpensive and you get the nice and easy new bottom bracket. That would be my choice. I suppose you could replace the big ring of the 7700 with a bash guard and have a decent range but it seems a waste of an attractive group that could be sold or used for a more appropriate project.

I loved the 6500 Ultegra STIs I had. They were smooth, light touch, and fast. I've read some bad reviews and always wonder if I lucked out or if they don't know how to set up shifters.
I would go with the 2x9. Get a compact crank(46/34) or sub-compact(46/32 or 46/30) and pair it with a decently wide range cassette using a derailleur that can handle the chain wrap.
There are 9 speed cassettes that are 12-36 in range. Really cool because you drop the 11t cog as that then doesnt waste one of your 9 choices.

I'd use the 7700 and limit it out to two chainrings. Best group I've ever used.

I have the 2x9 on it now. Great for around Lexington which is relatively flat. I definitely need some lower gearing for the mountains. It is a sweet ride.

If you were going to change out the cranks, FD, RD and cassette what would you go with? I need to be able to use this bike for mountain gravel rides.

You just completely changed the original question of whether you should go with the DA or Ultegra group. Is the DA group still an option? Cause being able to get low enough gearing for mountains with those two old groups will require a triple crank.

I was going off of memory in the original post. When I got around to digging out the Dura-ace groupset out it was a double not a triple. I am getting old.

I'd consider what smallest size large ring would be enough for where you ride. Also what lowest gearing e.g. 1:1 or lower, you'd want when you hit the mountains.
If you're ok with spinning out down the steeper sections then you can reduce that large ring size a little.
This may see you in the sub-compact gearing range.
