Brownies are one of the human race's greatest accomplishments. But frosted brownies have no peer. They make the notion of more perfect plausible. Much more so than in the preamble to the Constitution.

And for those who didn't know, unlike cake, brownies made with vegetable oil and sans frosting contain no dairy. So, a delectable food for the lactose intolerant among us. And the pecan and walnut allergic are fortunate in Houston to have a bulk source of blanched hazelnuts. Now that is a combination TDF. Brownies with hazelnuts. Yummmm!

And BTW, if you have never tried frozen brownies, especially frosted ones, you have a great epiphany awaiting you.

For Ripley's "Believe it or Not": I met someone the other day who did not know that the best way to cook bacon was in the microwave. I was trying to figure out why she thought the device had been invented in the first place. If they ever start giving Nobel prizes for things that are REALLY important, not all the pure science stuff, surely the microwave oven will lead the list -- or as it was originally known, the "Amana Radar Range".

I like brownies that are dense and fudgy. Sometimes they are dry and cake-like. What's the point??

I think brownies should be dense and fudgy, but not wet nor tarry. They can be pretty dry, but never cake-like, not even like very moist cake. They should break, rather than bending. I find browny mixes inedible.

Brownies should never be frosted.

Continental Baking Company, the folks behind Krusteaz mixes, offer a line of Ghirardelli branded brownie mixes. They are actually superb. Ghirardelli is very jealous of their brand and wouldn't have licensed their name and chocolate to be used on/in these mixes without them being very good. Most decent supermarkets have at least some of the varieties, but Costco carries a triple chocolate version in a six mix pack. Because of your current opinion, you wouldn't want to start with that, but you could keep it in mind for when one of the supermarket versions change your mind. I guarantee that is what would happen if you gave them a try. To get the consistency you like, bake them for the lower time of the interval specified. You will thank me.

Everything Krusteaz is excellent. They offer mixes for muffins, cookies, lemon and lime squares, a few different versions of corn bread and other coffee cake-like products, but, peculiarly to the best of my knowledge, no layer cakes. Well, I do see some gluten-free layer cakes on line, but not the regular type. Go figure.

My go-to frosting for brownies is a thin fudge fondant that is pourable when hot, then crystallizes and sets up as it cools. It is called Always Delicious Chocolate Icing, and it is true to its name. You just warm it up, pour it onto the brownies, push it to the edges with a spatula, then clean up the sides. It is self-leveling and makes a uniform layer. The recipe came from a professional (there is that word again!) baker friend of my family whose bakery was iconic in New Orleans when I was young. She used the icing in one flavor or another on most of her cakes as a final coating over the butter cream frosting. Dy-no-mite!

Brownies are delicious, but I am a huge fan of the water, brown sugar and cocoa mix on the top, prior to baking. It turns it into a brownie that floats on chocolate pudding. Served warm, that likely my favorite dessert, if not my favorite food.

That's a small decimal point. I thought I could buy a 175 pound Great British Fruitcake, for 45 bucks. What I would do with it after that, is beyond me. But it looked like a deal.
