pedal/shoe stack height

Hi
I have 5 roadbikes and 3 sets of shoes--pedals are all shimano spd sl
I have had several injuries and am particular about bike fit--esp saddle height
I cannot seem to find a reliable way to account for different shoes---so--what do think of this
---Shoes on
---mark a spot below kneecap
---stand up straight and get an assistant to place a spirit level from the leg mark to wall or door and then mark that spot
--repeat with all shoes and work it out from there
