Alright. Time to buy this wheelset. I'm really wanting to order these: Hunt 4 Season Gravel Wheelset but I have a few questions to those that know more than I do here.

Currently I have the stock Giant PX2 wheelset. Smallest tires I run are Panaracer Pasela's in 28c and largest are WTB Riddlers in 45c. The interior rim width of the PX2 wheelset is 19, the Hunt's is 20. The Riddler 45c's fit in the frame but I don't want them to be any wider on the Hunts. Question is. Will the difference of 19 to 20 interior rim width make the Riddlers much wider if any?

Also wanting to know how easy it is to set up wheels I order online. I would be ordering the discs and cassette as well.

a wider rim will widen the tire width, but a 1mm inner width increase will be negligible in tire width difference. If your frame has the room, I wouldnt think twice as you wouldnt visibly see it as wider.

It's easy to set up the wheels if you know how. YouTube or online directions are available everywhere and give you an easy visual to reference if stuck.
I would assume the wheels will be set up as thru axle, so you wouldnt have to change that. And rotors are easy to attach. If you have centerlock rotors, just make sure you have the tool. 6bolt rotors need a torx tool.
Just tape the rim(if it doesnt come taped), attach the rotor, and install the tire.

My Canyon Grail 8 has a 2x 11s Shimano GRX 810. If I were to get a second set of road wheels and set them up with an Ultegra 11s cassette and disc rotors (which Shimano states are compatible), should they just fit or would it be some adjusting needed?

The brake rotors and cassette might be a bit off. Both can be shimmed so you don't need to adjust. The disc is the bigger deal as the clearance is tight.

With the wheels, you'd also want rotors and a cassette. Get the same rotors that come with the bike and basically the same hubs, and you might get lucky. Looks like you've got DT Swiss G1800, wheels, so any DT Swiss hub'd road wheel should be OK. The rotors looks to be Shimano RT800, so any similar Shimano centerlock rotor (160 both ends?) should be OK

This's super helpful, thanks! Yes, I have my eye on either the DT Swiss P 1800 Spline or the E 1800 Spline to keep things as consistent as possible. Ideally, I'd like to just swap the two sets and go. So, I guess that this set up (DT Swiss + Ultegra) would be the way to go?

Get the E! The P is narrower, the E1800 32 is better for everyone. The E would be aero-ish with a 24 or 25c tire. The P would need a 21c tire, which doesn't exist.

The E has the louder hub and cheaper looking graphics. The ER has nicer looking hub and rim, as well as the rear hub is quieter.

Cassette - You can use any road 11sp cassette from Shimano under 36t likely. The 11-34 (HG 800 or HG700) needs a spacer if the current wheel has a spacer behind the cassette as it fits different than other hubs (11sp Mountain fit = 10sp road fit). I'd save $30 on the 150 HG700 or get a 11-30 or 11-32. It won't matter to the rear derailleur.

So it seems like the ER 1600 Spline set + the Shimano CS-HG800-11 cassette (I do like/need the low gear) + the Ultegra disc rotors would be the way to go? Am I missing something (aside the tires of course)?

you might need a set of lock rings for the rotors.

The 105 stuff is a good buy there hg700 11-34 is just a tad heavier (likely just the lock ring) and is functionally the same. The rotors are $15 cheaper each and just a bit heavier. You’re looking at $70 for 50gr. Why not put the cheaper cassette and uglier 105 rotors on the gravel wheels and save $70?

Just to chime in.

I recently added a second 650b set to my 700c endurance bike. No adjustments between swaps. But I did use the same model cassette for both. Shimano 10 speed 11-36.

I got some cheaper evo touring wheels that are both rim and disc compatible, just to see how I like the idea of two sets. That way, if I do find it worthwhile, I can upgrade the set for this bike and use the evos for another project bike. Currently they are disc and I'm changing the front sets to 180 rotors.

So far, so good. It's great to flex from 700 x 28 GP 5000's on the road to 650b x 42 WTB Ventures for trails.

i forget how many people have disk breaks , vittoria had a really cheap tubeless wheel set i got mine for 175 ish !

Very well. There's some cush but mostly it's the impact on traction on muddy trails that I notice. My speed and cornering confidence has definitely increased.
