I've never tested my peak, 5 second and 1 minute the numbers just from a rides and intervals I've done.
I would start with 20min, 10min, and 5min tests. get the numbers, then set your goals from there.

Oh right - but for some reason it's blank for me, even though I uploaded a bunch of old rides.

I must be doing something wrong, but when I look at it the date range is just today-tomorrow.. seems weird that the PM tab is per-ride (instead of global), but maybe I'm not seeing some special view? Confusing.

V2 or V3? I use V2 because V3 was too buggy for me.

Check the slider and the boxes at the bottom of the graph. I set the slider to reflect the start of my season.

I've tested my 20 min and 5 minute. I can do a 10 minute test though, no harm in that.

Well I have done it...
I was offered a trade of one of my wheelsets for a Powertap Pro+ (Wireless) which I will get Sunday. Probably finish out the year with it, sell it and move to an srm.
Guess I will have to lean on y'all to direct me a little (ok a lot) and go from there.

okay so I do some tempo intervals on the road, then plug the head unit into golden cheetah. golden cheetah shows the average power for the intervals as pretty close to what the head unit has, but average power for the whole ride is lower in GC than it is on the head unit.

Also, the head unit has a ride time of a few minutes longer than what GC has. What gives?

Absolutely, I am going to create a sock puppet, post them in the 41 then ask if I should start racing. They will come back and tell me to work a little more and set my goals low, I will retort and say that I can ride for 40 miles at 15 mph and that I think I can race ProTour, an on and on.

So let's see:
I am 84.5 kilos but I will put 62 kilos into the settings so we should be good.

And it was only once, and i had just ridden 100 miles, and she wasnt that hot, and she had way too tight of a grip!!!!!!!!!!!!!!!

You're looking at the Performance Manager chart in the Diary tab (v3)? v3 for me is better since it uses TSS which is equal to WKO. There's a slider at the bottom of that chart to move the start date around. Could be wrong by default.

Diary tab hmm... I don't have GC here at work but I must have the wrong/older version, I don't rememer seeing that tab.. The only PM tab I have is per-ride, which doesn't make sense to show a ~PMC for each ride anyway.

When I get home I'll see which version I'm on and why the F I can't see this easily. Also when I first loaded my files there were some huge spikes I had to flatten.. I guess WKO does this for you? Get what you pay for I guess.

I know you are for the simple reason that when analyzing your lies in you post the following came to light:
1. It was only once - nothing ever happens only once
2. She wasn't that hot - no need to comment
