Tire size for Clydesdale road biker
I'm 52, 6' 6" and weigh 210 lbs. I ride a Kona Major Jake for triathlon, century rides and back road cruising. Wheels are Mavic Open Sport/Ultegra Hubs. Should I use 700x23 or 700x25 tires because of my weight? I ride smooth highways and pebbly asphalt country roads, rain or shine. I don't want to change tires for each type of ride. If it matters, I prefer Continental GP 3000/4000 tires.

I'm heavier than you and I use 23's with no problem. Just inflate to sidewall/rim max, whichever's lower.

I was 235 when I started riding and I was on 23's. I ran my tires at about 115psi and I never had any problems.
There is a local CAT3 racer in my area that weighs 260 (probably around 6'6")! This guy is winning at road races and crits and is just an all around animal. He is amazing to watch. Anyway, he is still riding 23's.

I'm 205 and use 25's (GP4000). I switched from 23 to 25 two years ago because I found the ride quality was better.

You're fine on 23's. We use 23's on our tandem for time trialing with a team weight of 340lbs.
25's would give you the option of running a bit lower pressure which would give you a more comfortable ride, but you don't need 25's

You'll be fine if you run 23s, but you may want to run 25s for the increased comfort. I don't think you'll see much of a performance drop going from a 23 to 25.

I started the year at 210 (I'm down to 190 now) on 23's without an issue.

You can always lower the pressure just a tad and gain some comfort. I'm 220'ish and ride 23s usually at about 8 bar or whatever PSI that works out to be.
