Another advantage to the 7.2 or 7.3 you asked about is that you're less likely to be mistaken for a common Fred insecurely gloating about conspicuous consumption.

That should be a nice bike, you'll probably enjoy it a lot.
I have a 7.2 myself and my general thinking on this issue is it does what I need in the realm of a hybrid bicycle. If I get to the point where I feel the FX can't keep up with what I want from a bike, then it's probably time for me to go full-on road bike.

definitely the 7.2. on paper the 7.3 may have some "better" parts but in terms of functionality i don't notice anything. same frame. components work well for both. 7.2 is just as functional. best value. 7.2 imo is a smoother ride because it has 35mm tires which are wider than the 7.3s (7.2 also has more fork clearance). i've owned a 7.2 and a 7.5 fx. i can't tell any difference. they both ride well and work perfectly. so save your money and get the 7.2.

You can adjust the grips to your comfort up or down. Also the integrate cables in the frame are very nice. Not sure about the 7.2 but iwaki able to but 700x 42 tires on my 7.3. Off-road tires.
