The Hunt wheels look cool and are priced super low, but I'm a little nervous about the tariff thing and international shipping right now might be significantly delayed due to COVID-19. If you're worried about this, you can build a set of custom wheels on ProWheelBuilder.com with DT Swiss 350 hubs for less than $500.
They sell Kinlin rims and Bitex hubs, which Hunt uses/used to use. PWB has some DT Swiss rims that are a little cheaper, which might let you play around with a lighter spoke to keep the weight down while still staying in budget.
You could also look at Boyd Altamont rims. They're a little more money from Boyd's website, but you can build up a sub 1500g set on PWB with Bitex hubs an Sapium Race spokes ffor under $500. Your LBS can probably build a set that is price competitive with PWB. It's worth checking if you want to go the custom route.

Your best bet is to get them at your LBS, It will be the same price as online now that Shimano is enforcing pricing policies. A lot of local shops started to stock up in Feb and Mar for the summer season. shimano charges a lot for shifters and derailleurs because of limited competition but they had tpo price theri wheels very low because they had to sell hem against a lot of pretty well established companies already accepted in the market.
