Bottom Bracket Spindle Length
Is see BB spindles being listed in various widths. If I want to swap a triple crank to a double, which is listed with, e.g., 10mm narrower spindle. Do I have to buy the narrower spindle or can I put something like washers in there. Or does it even matter?

Get the right size bottom bracket.
If you don't the crankset is going to stick out too far. That will upset your chainline and cause chain noise in some gear combinations. It'll also cause chain rub on your front derailleur, maybe make the front shifting screwy. It'll also look goofy.
