Too Big or Just Right?

When I got my first bike (a Trek 2.3) I was fit into a 58cm. I am 183cm. My bike inseam is about 85cm. I have super long arms though (my dress shirt size is a 36) and my wingspan is 75 inches.

Whenever I see bikes around I see a super tall saddle drop, but I can't get mine more than 3cm without it feeling too high.

Picked up a 58cm Domane as an upgrade. I was wondering if I should downsize to a 56cm or does my fit look decent? This whole coronavirus thing is making bike shopping impossible and where I am things are not going to get back to normal for a long time unfortunately! The 58 Domane has an effective top tube of 56.7 so I guess it is technically a little bit smaller than stated (for example the Roubaix has an ETT for a 58 of 58). Going to a 56 I think might end up with too cramped of a cockpit.

Definitely not too large. You need a longer stem, and I'd like to see a -17° stem. With your elbows bent like that, your upper arms should make a 90° angle with your straight torso. See:
