Wheel suggestions please
The gf just picked up a 2017 Cannondale Super X 105 and loves everything about it but the wheel weight. This bike uses the Asymmetrical design which apparently must be used with this bike? So question being can anyone recommend a lighter disc brake, axle through wheel application or perhaps can she get away with a non asymmetrical design? She’s been searching for two days and not finding many options.

Yup. Almost any 700c disc brake/shimano freehub wheelset will work, but the rear will need to be re-dished by a shop. Most shops can do this fairly easily.
I wouldn't worry too much about finding a set that already has been dished.
Need more info to make a specific wheelset recommendation. Budget? Tire size? Carbon or aluminum?
Zipp 303's work great on this bike, very popular among the gravel/cx racers. HED Ardennes+ is a good non-carbon option that is more affordable than Zipp.

HED Eroica rims are asymmetrical. As previously stated, re-dish. But those will definitely delight the GF. The GPs are ~800 a set and weigh around 1650g. Not bad for an Aluminum wheelset you can beat the crap out of.
