What data field do you look at during intervals?

Say you're trying to do three sets of ten minutes at 300 watts. Or whatever.

On an Edge 500 or something similar, in order to pedal at the correct level of intensity, do you display and look at 10s Avg Power, 30s Avg Power, Lap Power...?

I have a dedicated interval screen. Top to bottom, 3s avg power, lap power, lap time, HR+cadence.

I don't have a power meter, and have a screen on my Edge500 that displays HR and Time. Good enough for a Cat6 like me. Time is interesting for me but I try to set my intervals by landmark, and just use the time as a reference.

1) short term power (3s for intervals under 5'; 30s for intervals over)
2) lap power
3) lap time
4) HR

I try to make 1 = 2 = target power

That's what I'm going to setup when I get my 510 and Powertap installed on the bike. I hope I can squeeze speed on that page as well.

Time, power (not averaged), heart rate, cadence, time of day.
The averaged power displays confuse more than they help. They introduce a lag that makes me overcompensate constantly, causing my true power to vary more than when using the straight, unaveraged power.

Then again, I use mainly cadence to keep power steady.

3s avg for shorter ints. 30s avg for longer ints.
Nothing for tabatas.

Too many distractions make focusing difficult for me.

I've heard that real time power (not 3s averaged) just fluctuates too wildly to be useful. If you're doing an interval I've heard that what really matters is that you want to average your target power number over the course of interval. Hence the idea of displaying both 3s average power and average power during the interval. So if your power average during an interval is low you can use the 3s average to get it back up.

It is for me. Even 3s is a little to bouncy for me sometimes. I think 6s or 10s would be about just the right amount of smoothing.

Averaging has helped my pacing quite a bit. If I drop just below my target range I increase it that much and the average catches up with my effort.
I find that I bounce around too much without it and it fluctuates so much I may as well close my eyes. I have trainerroad setup for averaging as well.

On the road, that's true, but on a stationary, you can use real-time and nail it pretty damn consistently.
