Shimano 160mm to 200m (or 203mm) brake upgrade question.

I own a Mongoose Hitch fat bike that I will be converting to electric. It comes stock with 160mm disc brakes which are pretty bad. I've heard of people upgrading to 203mm Shimano brakes but I can't find any kits. Do I just buy the rotors? From my understanding 203mm rotors won't fit into 160mm disc holders, is that correct?

Post some photos of the brakes attached to the bike.

You need adapters to fit the brake caliper with different size rotors, the adapters need to match the caliper mount type and the frame/fork mount type.
There is a few different types of disc brake mounts, the front and rear mounts can vary in size and types.
The adapter size needs to match the rotor size.
