Fastest Pro Sprinter?

Hypothetical I know, but on fresh legs from a slightly rolling start, which pro cyclist would probably win a, say, 200 meter (about an 1/8th of a mile) race?

Well, I'll throw out a guess and say in this scenario the bigger the better and that means Kittel. If he can get those big legs moving at top speed in that short a race, then I think he would take it.

He looks the most like a track sprinter with huge size, but I'm not sure he has any track experience, so that might favor a Gronewagen or Viviani who both have a lot of time on the track.

I think this year we are seeing a changing of the guard for sprinter. My pick would be Viviani or Gaviria or anyone from Quickstep haha. I bet if Kittel had stayed, he be winning some races.

For me all time would be Manx Missile. I'm sure there better out there, but in his prime a few years ago, no one could have out beat him. With the likes of Kittel and Grippel, he was just out sprinting them

I'm not sure I would consider Sagan a pure sprinter. In the days when Cav, Greipel, Kittel, Kristoff were at their best, he never beat them. I think he's doing better these days because the sprinter field is weaker or in transition.

Agreed.

But actually, there is no "fastest sprinter". On any given day, somebody has it. On another, somebody else does. There are a select few who could be that somebody, but then other variables enter.

not a flying start sprint for the last 200M,
after riding for several hours in a bike stage race of over 100 miles, on the day..

dylan g possibly. sam bennett is a good choice. all the (recent) quick step sprinters (gavria, trentin, viviani) slayed it but methinx it was a combo of the lead out train + their abilities.
if gaviria does indeed xfer to uae, i don't expect him to be as competitive. trentin hasn't been as automatic since he left quick step. viviani had a helluva year after leaving sky and joining quick step.

It's fun to think about but the lead-out trains often put out more power for longer in the lead-in than amateurs and do in an all-out 5 second dig.

Like, 800w for over a 1/2 minute.

It'd be fun to have a leadout train work with you on the local group ride. They'd have to back it off a lot, as probably couldn't even hold their wheels, but that's gotta be freaking fun.
