Data Point: Conti 4000S ii vs 5000 width
The 28C Conti 4000S ii’s on the Macchiato were due for replacement as the “wear dots” had virtually disappeared.
The 5000 has replaced 4000S ii in Conti’s line-up, so I mounted a set.
I was surprised to find they run about 10% narrower (27mm vs 30mm, both on a 19mm internal width Rolf rim).
We previously have used 25C Conti’s, so we’re still in our comfort zone, but it will be interesting to see how this change affects rolling resistance, comfort, and longevity.
Now off to calculate new tire pressures.

28c 4000s run 31+ mm on my 19mm rims. I bought 32c 5000s and they measure 33+. I use 32c 4 seasons for rear tires and they measure 34+. All at ~90psi

GP4000SII is notorious for running extremely large. As you've discovered, the GP5000 runs just about an entire size smaller than the GP4000SII, which was intended to bring it in line with the rest of the market and make the nominal size much closer to the actual inflated size on most current rims.

We have both on our tandem. The 28mm 4KII are almost identical in size to the 32mm 5000. We are moving to that 5000 as we use up our stock of 4KII. Recommended. We are 287 lbs., run 95 lbs in the 32mm 5000.

We run 90 PSI tubeless with 32mm X 700C GP5000s. They have been very little trouble. Our team + bike + luggage is around 450 pounds.

Same for us - 32mm 5000s @90, more or less, except with tubes. Pleased with first and second sets on Rolf carbon wheels, and likely will stick with them.
