any suggestions for fitting an upright trike?

I know I am going to get the larger size tires (24") on the Sun Traditional as I rode one on vacation and enjoyed it for the most part. I am pretty sure the seat isn't right (female, runner, though currently in post winter mode- as in haven't been very active besides lots of walking indoors this winter). The one that comes with it was on the rental and I didn't like it, so planning to switch it for a more traditional bike seat... other than that and a long chain with a lock, a helmet and a water bottle holder- anything else I should be looking for when I first order/pick up the trike? We are having the 7 speed setup added, but I don't think I want cleats- this is to be a fun ride/grocery ride/commuter bike and not having to carry different shoes would be a plus... besides I prefer minimalist shoes or barefoot and might well be riding without shoes at all.

Is there anything else I should be asking the staff at the LBS to make sure they are doing (seat height/handbar adjustments I'm already planning on asking about).

I am going on Saturday to order, and it should be picked up about a week later.
