Mainly outdoor stuff. She'll probably want to shoot some cyclocross. I've seen her looking at the Nikon D5600, so that's the ballpark budget.

I would hold off on that 5600 for now. There are some changes rumored in the wind that might make that outdated. Might take a few weeks, how much patience does she have?

Its a bit smaller form, and a size that women who have not shot seriously typically like. Cameras like that have a lot of features that make it easier to learn the art.
The lenses that come with cameras such as the D5600 and comparable Canon’s are junk and very limiting. Hard to get creative results with them due to their characteristics. If she goes that route, I recommend buying just the body, and buying a separate lens that is higher quality in the 24-105mm range. The better lenses will be a bit more expensive, but you can often find nice used lenses at good prices. The good thing is that good lenses really hold value. There is no used market for the low end lenses.
Coincidentally, yesterday I sold one of the Canon “big whites” that I bought used 10 years ago for $200 less than I paid for it.

Back when I got into digital photography about 18 years ago, I bought one of those L lenses. My wife, who knows next to nothing about photography, noticed the difference between that and my other lower end lenses immediately, the differences were that great. But, hard to spend that kind of money starting out and not knowing if you will stay in it.
In photography, it’s all about the glass, not the body.
Ive been into photography since college, and when my kids were involved in sports took a deep dive into digital. Got into sports photography in a big way when the kids were in high school. Always happy to answer questions.

When I graduated from college my parents got me a Cannon T7. Back then I was into surfing and my best friend was a film major at VCU. I had pretty high aspirations to start making surfing movies. Only got one short film made and my interest in movie making fizzled. Still have the camera and like the idea of getting into photography, but when ever I take a picture it never looks as spectacular as I wish to portray. I wish I could bring one flying with me, early morning and evening I see some pretty spectacular scenery. For obvious reasons that isn’t allowed.
New bottle cage is on the bike. New torque wrench worked as advertised. Going to be 20 degrees tomorrow when I clip in. So will prolly only do about a 20 miler. 90 miles to go for 5k.
