My 5-6 mm wrenches don’t work to unscrew bike saddle
I’m trying to put in a new saddle but the Alan wrench doesn’t take it off.

It's probably standard rather than metric. If it's not that there's a good chance it's striped.
Very rarely, it's actually the tool itself because the tolerances are incorrect. This only happens with extremely cheap equipment though, and even then it's unlikely.
*Edit - Or are you saying the bolt is seized? Because if that's the case, liquid wrench (or any decent penetrator, really) will make light work of it.

If you have a Guerrcotti, the Alan wrench may not work. You could try a Basso wrench but I know for a fact the De Rosa wrench won't work. Should gone with Campagnolo, he invented the quick release would have made it way easier.

... and if it's not a torx head bolt, you can use a torx bit, bashed in with a hammer, to bite onto a stripped-out allen head bolt.

I know I know but I wanted to make an Italian bike joke. I briefly owned a Guerrcotti but ended up stripping what I needed and give the frame to my service manager at the time because he was an excellent employee who rose to the challenge quite quickly and he really wanted it. He still has it last I talked with him but he left a little after I was needed at another shop in the company.
