Differences
They seem to have sub-divided cycles to the limit since my youth. What exactly is the difference between a gravel bike and an adventure bike.

Not much. Its all just terms to segment a market for sales.
Adventure bikes are part of the gravel category.

The word "Adventure" and "Gravel" may be how to answer the question.
We also see the combination: endurance/adventure.
One way is to interpret adventure as the ride itself. Like the Adventure of Tom Sawyer, Adventure of Sherlock Holmes, Adventure of Ulysses, etc.
Gravel seems more specific as to the purpose of the bike build. And quite naturally, it would require a build like that to seek out and actually experience that Adventure.
One may dismiss all this as part of the marketing playbook. Maybe not.

Ignore the marketing jargon. Find a set of bikes that can do what you want with compromises that you can tolerate given the amount of investment required to not make them. There are differences in geometry between adventure, gravel, cross and endurance bikes; but they aren't necessarily consistent between manufacturers, and some manufacturers make decisions, based on these (to me) overly specialized categories, that limit the versatility of their bikes.
That may sound as vague as the marketing speak is overly detailed, but if you can define what you want to do on a given bike, the distinctions among (not necessarily between) the newer categories of bikes become more meaningful.
