Well, this is where it ended up. I decided not to go the expensive French parts route until I knew if I would like the ride, so I built it with Shimano Altus and SR Apex. It turned out to be a decent-riding bike, albeit a little heavy.

Now, I see Planet Bike has come out with white fenders and for the Komen Foundation (or someone else), they had pink fenders for a brief time I am told, that would have been a sight to see.
I have better photos and though the clarity is not the best here, it largely shows the fenders at their best.

More French bikes with fenders
Here are a couple of 650B French bikes, a 1947 L. Pitard camping bike and a 70-something CNC with VO fenders. Probably many of you have tried the VO fenders - I am quite impressed with them, especially at that price.

Wow, that Ebisu is very nice - beautiful frame details and neat components. Great photos too. Beats hanging an old sheet behind the bike!
Here is another photo of the Pitard with the racks and lighting installed. The frame is built with Vitus Extra Leger tubing, which I think would be too flexible for loaded touring, hence the diagonals. 3speedslow - the Pitard is quite nice to actually see in person, and I like the fact that Duke7777 decided to leave the original finish as it adds that certain patina that helps to truly appreciate the many fine details on the bike. It is great to be able to know someone that enjoys these vintage French bikes - I feel somewhat spoiled whenever I look at what he has! Thanks to members such as him there are obscure and rare marques being put back on the road to be enjoyed again. By the way, your chain ring arrived in Blaine so hopefully I can get down there in the next few days and send yours along. In the meantime here is my very modest contribution to this thread:

Thanks! I may still go that route. I must say, however, that the Altus/Tourney stuff, low-rent as it may be, works very well.

My 81ish Zebrakenko New Wind, I put some 27's and cheap fenders on it for now, its getting the factory 700c and putting some Honjos on once they arrive!
