Help me pick parts for my Schwinn Paramount P15 Retro/Modern Built

I've had this 1979 Schwinn P15 paramount frame for years, and recently got it repainted at Waterford (the last photo is the previous build). So now I'm figuring out what new parts I want to buy to rebuild it. I want this bike to be a "ride all day in comfort" touring bike, not looking for it to be super fast or racing-oriented. Am also not planning on attaching touring bags, etc. I'd like to keep the vintage look as much as possible (silver components, for instance) but don't want to use actual old parts.

Here's what I want to keep on it:
  • Gevenalle Audax shifters
  • Handlebars and stem (nitto)
  • saddle & seatpost
  • brakes
  • rear derailleur (have an ultegra 6500, feels great with the friction shifters)
Here's what I want to upgrade:
  • wheels: currently have machine-built Mavic A319 / Tiagra hubs which I've had trued too many times. I like the width of the rims though. Would like to run around a 700x32 tire, I'm about 165lbs. Would definitely like to get super nice wheels which will last a long time. Frame is spaced to 130mm. I do like cup/cone hubs like Shimano.
  • headset: maybe something with needle bearings? I had an old campy headset on there which got indexed eventually
  • crankset: would like this to look sorta old. I had a MTB 24x36x48 which I liked gearing-wise, but it didn't "match". The Rene Herse cranks are really cool, for instance, but maybe over my budget. I like the triple and would also consider a compact double and bigger cassette (was running 12-26). Want to keep the same gearing range, it works well for me where I ride and gives a bailout gear.
  • front derailleur: I was running an old suntour ARx. I tried a modern shimano double and the cage is too long, since the RD control cable is on top of the chainstay. So I need something with a shorter cage. Since my shifting is friction I'd rather use a double FD
Let me know what suggestions you'd have! Would like to keep it under $1000 for all of the parts.

I really got nuthin, but I am a huge Paramount fan, love your frame, looks great.

I have 5, 2 are frame only, 1 is way too small and being retrofitted/built up for a very good friend and may end up a lot like yours as it is a donor of its original parts.

The 3 completes are a 1958 and a 1976? mostly original with Phil Wood hubs and BB and ms. merziacs 74? womens model also mostly original aside from upright bars and thumbies.

The 58 with mostly original parts.



I'm fairly stubborn about these and like them as they were/should be imo.

That being said and somewhat in the same vein as you, I built this up using several oldschool parts mainly for the chrome and to get some factor into the build.

Custom 2020 Strawberry built with an eye toward the glory days of Paramounts, Raleigh Pro's Cinelli and Bianchi SC's and Moto TC's.

I did something similar recently with a repainted Ritchey:
Wheels are from Pacenti
Crank is SUN XCD which can be configured as a triple, Current set up is 46/30
RD is Microshift (same as SunXCD) R10
FD is from IRD for compact doubles
10 speed indexed Shimano bar-ends
10 speed 12-30 Ultegra cassette
Rear of the bikewas cold set to 130mm when it was repainted
