How to Remove Cables When Replacing Shifters?
I am swapping my STI shifters out for Gevanalle Shifters and have the STI shifters loose off my handle bars but can't seem to get the cables undone. How would I go about removing them from the STI shifters coming off?

if you expose the wire and pull the lever you can see where it enters the grip and if you push it through can grab the knob-end of the wire and pull it through with a pair of plyers.

One solution would be to replace the cables. Sometimes cables can be salvaged, but a frayed end can make the job difficult and it's well worth the money to replace them.
If you really need to salvage the cables, remove the cable ends from the derailleurs and calipers. Shift into high gear while pulling on the shift cable. Squeeze the brake lever and you'll see the shifter cable end lining up with a feeder hole. Push the cable out that way. The brake cable should be visible now, too.

Pull gently on the inner wire while pushing the inner (release) lever repeatedly until it's in the most "relaxed" position. Then the cable head will be exposed and the cable can be pushed out of the shifter.

Cut the cables and remove the shifters and cables together.
Inner cables are $4. Replacing shifters seems like a good time to install fresh cables.

The cables have to be disconnected from the derailleurs so that they can be pulled out through the STI shifter

Also, since you're changing shifters, the odds of the old cables working for you are pretty low.
