Ah, I didn't know about that limit. I wonder if you could put a double crankset on there? Probably too wide huh?

IMHO, that gearing is about right. Maybe up to a 34 on the back with the new Shimano cassettes. FWIW, I ride about 60:40 gravel:road, and in my experience once I got used to the difference in the surface, I found the gearing difference was less about the total range I had available and more about where I was putting the chain on the cassette.

So yeah, you need to shim the FD and come up with some sort of a cable stop.
(I just went down from a 42 to a 38 paired with a 10-42 cassette and i'm loving it, but that's another story)

I think you’re right, the issue is traction, if the gearing is too tall one risks spinning the tires and wasting energy. But, in my experience, riding in Southern Germany on the edge of the Black Forest (similar to what you describe in the Catskills), I’ve used that same gearing with no issues, including on “fat slicks.” This is only my opinion and based on my personal experience.

Thanks to everyone for their input.
i did almost 13 real hilly gravel roads at Minniwaska State Park w about 1200ft elevation climbing.
The bike did better than I expected, was incredibly stable and comfortable.
i also did a 30 mile road ride, it did okay but certainly not fast over the road as it was on gravel roads.
It did take a lot of set up time, as everything was out of adjustment. Quality is better than expected for $1300
Rims are tubeless ready and I did that last night. I’m thinking of going with a lower rear cassette because on some of the steeper climbs, pedaling was hard but I always had traction.
Fun stuff riding ridges of mountain tops, but some of the climbs and descents were difficult. Oh, went w SPD’s too, a little sketchy at times but I will get used to it, or die.... lol

The 46/30 cranks seem to be what you want. Not many makers have them on stock models but you can get a sram set up and sell the cranks and swap for a 46/30 set up .then a 11-36 cassette and your done. If you insit on shimano then absolute black has a chainring swap you can do .they're a pittle pricey not much more than a basic sram crankset but everything I read is good about them.
