Strada USH vs. Gravelking SK
I'm looking for a 700x32 70-30 road to gravel tire and have narrowed it down to these two. Which should I go with? I have a pair of Ritchey Crossmax for singletrack. This is for a Fuji Sportif Disc..

It rather depends on your priorities.
With two wheel sets, I use a 32mm slick for the riding you are describing. I want light, fast, and good cornering. I'm not riding them in crappy conditions. At the right pressure , they do amazing on gravel. Personally I think knobs on a 32mm are kind of silly if when I have knobs on larger tires. So, I would go for the gravel king 32mm slick. Your priorities may be different...
