I like the cut of your jib.
for me it's something in stainless. Oversize head tube for a tapered steerer, replaceable derailleur hanger, chain peg and pump peg, at most 2° slope on the top tube, internal cabling, threaded bottom bracket. Should be short in the back and stiff as possible. Built with campy (whatever has ultrashift when I build such a bike), carbon parts (zipp sl) and some really light carbon wheels to make the bike around 16 lb or less. That should make for a durable, all weather racing bike right? Genesis proved that a stainless bike can be made as stiff as pros demand with the volare 953, so the only problem would be the small fortune required to build one.

I've been waiting on my bucket list bike bike for 4 years. Finally got the opportunity to pull the trigger on a custom Speedvagen (via Vanilla Bicycles). Currently being built. Went with a Horizon paint scheme with matching Pro Stealth stem/bar combo. Internal DI2 wiring, carbon seatpost and head topper. ETA about 10 weeks or so!

Pegoretti or Waterford 22 Series Artisan. That or some kind of custom Ti. Now that I think of it, I would need several bucket list bikes.

Carbon frame (any color but black) with seat stays that are below the top tube (like BMC, Canyon, etc.). SRAM eTap or DA Di2. Disc brakes. 50mm carbon rims. I guess not much after that.
We're supposed to get 10" of snow today, I've not ridden outside for a few months and I won't ride outside for a couple more. This is all too depressing.

Yeah, the weather these past couple of weeks definitely has me re-thinking what my next bucket list bike should be. I mean, yeah, a Crumpton SL will never be far from the top of the list, but these days I'm thinking I might get more use out of a Jeff Jones Ti Spaceframe with Truss Fork and some big ol' knobby 29ers!

Good luck, don't think they distribute it further than Stowe, VT. They didn't even have any at the new brewery when I went at the beginning of the year. It's pretty good but wouldn't say I'd go out of my way to get it. Plenty of double- and west-coast-style IPAs out there which are good. I feel like Newburyport Greenhead IPA (MA) and Baxter Stowaway IPA (ME) are close but you may not be able to find them in CA. Can't think of a comparable CA beer at the time, the only thing that comes to mind is Modern Times Blazing World, but that one's an amber. Wouldn't mind having one of those right now, watching a sunset at Torrey Pines in La Jolla... damn, what am I still doing on the East Coast with these single-digit temps? I could be riding my bike all year round!

On a thread related topic, I was originally planning to simply move all my components from my Domane to the new Speedvagen, but this morning, I saw that Merlin was having a sale that included an additional 10% off on components and groupsets. So although I now have to figure out how to explain to the spousal unit, I picked up a complete Dura Ace 9150 DI2 group with bottom bracket (which I needed to buy anyway) for $2139!
I think I'll just let my wife know that it will be easier for me to sell the Domane as a complete bike that as a frameset with headset, bar and stem. Now I'll sell it with one of my wheel sets and the Dura Ace 9070 set up that I have on it now.

As boring as it might seem, for me a dream bike would be just about any bike with a better iteration of CFwith Ultegra...and, um, I guess that's it.
Maybe something like a CDale Super Six or a Trek Emonda.
It's a bike. I'm more concerned with exercise and being in shape...but as I get older, the smoother (deader?) ride of CF might do me some good.

Something with Enve SES 5.6 and Components with SRAM eTap. Maybe the Bianchi Oltre.
TBH, I'd rather have 2-3 bikes that match the function (climbing, 1x11 crit bike, all arounder) that one $12k bike.

I don't want a "bucket list" bike.
It's an extravagant habit/hobby, and maybe I should just be content with what I have, but I keep getting new ones because they keep attracting me. I'm not in search of perfection or finality, and I guess I don't want to settle down.
That said, I have had a sort of dream bike, and am putting it together now.
Something like this, but not so much black, and with wheels not quite so flashy.

No disc brakes; shiny caliper rim brakes. No electronic shifting; nice shiny rear derailleur. Shiny levers. Tan leather saddle and tape. May occasionally run it with old-school box rim wheels that I already have, but new medium profile wheels arrived with nice new tires, but they aren't gumwall as planned (beggars can't be choosers - saved $500 via an eBay bargain). Another concession to modern style will be the crank set: CF, but the old five-arm spider style, not the new ugly kind.
