I very much appreciate the advice, and I am enjoying learning a little bit about this kind of stuff.
The thing is - I really don't use my computer for much more than web browsing and listening to music. Occasionally I will screw around in some music recording software but even then it's not like I'm trying to stack hundreds of audio tracks on top of one another and make my CPU try to handle it. I'll also very occasionally play something like Flight Simulator X, or maybe Portal on Steam, but I'm not a huge gamer. The graphics card got updated because for a period of time I was playing Kerbal Space Program and I lamented to my brother how slow it ran, so he bought me the GPU and power supply for Christmas.
Honestly, I'm a great candidate for something off the shelf. But I just can't help wanting to mess around with things that don't need to be messed around with

The 2.5 SATA drives are pretty reasonable - Samsungs are going for $50ish for a 500gb, $100ish for 1tb - and it would be an easy way to dip your toes in to tinkering under the hood of your computer (you just need a SATA cable, an available plug on your PSU and an open spot to mount the drive). There are decent, free disk cloning applications for migrating over to a a new drive, sometimes they're even available from the drive manufacturer.

I’ve been considering doing some upgrades lately, I have a 6th gen i5 quad core overclocked to 3.8ghz with an older GTX 1060 GPU, 32 GB of memory and a 512 SSD. It’s hard to justify the expense when it’s mostly just an internet box these days, but I occasionally do play a game here or there.
If you keep the case and power supply and GPU, you could probably do a budget build under 500 that would significantly outperform what you have now. An SSD is totally worth the money, you can come boot a machine and be fully functional in 10 seconds or so.

I'm only at 2-3 doubles per day between my wife and I, but that's prolly 12k drinks since I got the machines. By my math, that's almost $50k worth of coffee drinks at Starbucks, etc. I've got about $2.5k in to the machine and grinder, I've spent about $10k in coffee beans over that period of time and maybe $1k in to milk/soymilk/oatmilk. DAMN, SON! My coffee get-up is makin' me some money!!!

Double-check before you do - depending upon your hardware and OS, you might not be able to address the capacities that are common these days. Also keep in mind that you'll probably need DDR3, so your options might be limited (DDR4 has been the norm for a handful of years).

I read an article about how cheap a fancy, schmancy machine and grinder are over time and it makes sense. I was using a Nespresso the last few years and a Keurig for a few years before that and the capsules were costing a fortune. I tried refillable pods but the taste wasn't there.

It's not automatic so probably not. And if you did, you'd need a grinder that costs just as much.
