I run Campy Record 10 speed from around 2005. I do run a Dura Ace triple front derailleur from the same time frame though, along with a Campy Long Cage Record rear derailleur. I prefer the style of the shift levers and have run Campy on all my bikes for as long as their Ergo levers have been available.
The best thing about these older levers are that the front has multiple clicks so you can always trim it - it's a double lever that works fine on a triple crank. The first generation 11 speeds were the same, but the newer generation 11 speeds don't do this, nor do the 12's. The worst thing is the limited wide range cassettes out there for the 10 speed, and the newest only goes to a 11-32, if that is an issue.
I've found the newer 2015 and newer to be a bit finicky to setup compared to Shimano, but in terms of shift quality - I don't think either is much better than the other, as I just set up my wifes single with DuraAce 9100.

We used Athena derailleurs and integrated shifters on a new Tom Ritchey tandem we just built. These components were combined with an 11 cog Shimano cluster and a triple chainwheel MSA crankset. The brakes are mechanical TRP calipers with 225mm Hope rotors. So far this arrangement works great. The shifting is smooth and reliable and the braking is the best I have had on a tandem (we have been riding tandems regularly since 1973).

Bad example
I am putting together a 1970 Gitane Tandem now with Campy NR front and 980 rear. I put a SOMA long cage on the rear so it could handle a triple front. I have no idea yet how it will work!

Except for the hubs, brake levers, and pedals, this bike was all Nuovo Record Campagnolo. Everything but the right rear crank and spindle lasted for 43 years of continuous use.

I prefer steel tandem to alloy one. I have not ridden a carbon tandem. I expect I may feel the same.
I prefer a carbon single frame to a steel one. I like Ti for single too. Not for tandems.
I prefer carbon rims to alloy ones.
I prefer alloy stem/s to carbon. Seatpost - depends. For lightest weight - alloy.
I prefer carbon bars over alloy.
