I went to the Waterford site but couldn't get to any prices.
I've had 3 customs built for me. My namesake, the 1979 Peter Mooney. That was early on in Peter's career and his prices were then insanely low, given what he did. Then two titanium customs. Not Waterford gorgeous but true customs that are bikes never made elsewhere (and costing me easily Waterford prices, even without actually seeing their prices).
If this bike checks your boxes, you are going to love and ride it and you have a finite amount of life left. go for it! I'd be a sucker for that Nervex lugged version. I raced a Japanese bike with Nervex copies. Had Peter build my bike with Nervex instead of the then ubiquitous Prugnatlong point lugs. 40 years later, I still like looking at them.

I honestly don't know, but it sounds to me like the stainless is being used only decoratively. Simpler these days than chrome plating which has environmental issues. Personally if I were getting a steel bike right now, it would be Reynolds 953, the best stainless there is. Probably from Mercian. Lightest tube set with phenomenal strength for the weight. Never a worry about corrosion. You can paint what parts of it you wish.

If you can live without lugs and can find a Guru Sidero, you won't be disappointed. Mine in a 55 with SRAM Red is under 18 lb. with everything but a tool bag. As ridden it's 18 lb 14 oz. Pic previously posted.
