I used to run 11-25 9s with 39/53 and Sora short cage. I was asked for more range and fitted a 11-34 without issue but I needed a longer chain (2 links from memory).
I run these short cage sora derailleur in 1X with 11-36 cassette without any issue and I had no issue with 11-40.
I believe you should be fine with 11-34 or 11-36 from a derailleur point of view but the chain will have to be replaced.

‘thicker heavier tires’ - what tires are installed ?
it’s possible a switch to a different tire could be a plus also ? ... possibly lighter and/or roll better ? many options - but since it’s a Specialized bike I’ll stay with Specialized for one tire recommendation ... S Works Pathfinder 700x42 ...

Thank you everyone for your helpful replies. I have enough information with which to make my decision now.
One thing I do not want to do is swap.kut my tires as I do love the ride quality of these Kendas.

I have bikes that have 50/34 and 11-34. What I've found is that I "run out of leg" before I get to using the 34-34 combo on a steep hill, and end up walking it. Other riders' experience can, and probably will, vary. At 69, I can not climb like I used to.
All of the above discussion about what the OP can change is good and valid. But my take is that he is asking for opinion if he needs to do the changes before he starts riding, and I don't see that he is in a bad place to start with, with a 34-30 lowest combo.

It's very cliche and worthless when people ask how to achieve lower gearing and someone invariably comments on how the lower gearing is not necessary.
OP: any 8 or 9 speed (but not 10 speed) Shimano MTB rear derailleur will work with your 10 speed shifters. Find one that has a 34 or 36t maximum sprocket size and install it and a 11-34 (or 36t) cassette. Those RDs are common on eBay. I've done several gearing changes like that -10 speed road shifters with 10 speed MTB cassette and 8 or 9 speed MTB RD.

It sounds like you're set, but for future reference, the FSA gossamer probably used the FSA mega-exo bottom bracket. I had a similar setup on my 2007 Fuji Cross bike. I replaced the crank and bottom bracket with Shimano ultegra compatible pieces.
