Nice looking bike. According to this VeloBase.com - Component: Simplex SLJ5500 (version 1)
max cog = 30 and chain wrap = 26, so a 14-30 should work assuming 52/42 chainset. Maybe try a roadlink to be on the safe side.

I would drop the 52-42 to 47-38, for a 10 percent drop, then consider something like 14-28, or 13-28 if 47/14 is not a high enough top end for her. I am currently running 46-38 / 13-15-17-20-23-26 on the 1959 Capo.

We are notoriously cheap in our endeavors but I have pulled the trigger many times that I probably paid too much and got what I wanted, done deal.
Its far more of a pita when you miss something good only to never find another or a better deal.
The last thought is if the significant other wants on board, make it so, post haste.

I agree it's too expensive for what it is. And Eroica is long ways away... who knows what else will come up? I would also take into consideration how strong a rider your GF is; does she do these kind of rides? Gearing is a legit question. It certainly is for me, anyway.

Nice bike, top of the line money for mid level parts on a nice frame. The thing that would bother me though is how is it going to be shipped. Shipping is free but via USPS Parcel Select Ground??? Also, despite some nice bikes for sale by the seller, there is ZERO feedback as a seller of anything, only 24 purchases. Also, the description says the bike was made by a mechanic of Coppi, and then talks only about Coppi. Quite different from the higher end frame and bikes that he charges $181 to ship. So I wonder about the seller.
What is your price range, what is your GF's level of riding experience and current rides, and how far up the ladder of cost do you want to go? Does it need to be Italian or a very competent bike of the period?
Given you are about 60-90 minutes outside of Sacramento you may and should be able to find something suitable in the surrounding area or in the bay area, size though could be an issue and that could make for slim pickins. If you're looking for top notch vintage, you would have to go much further or ship in. Since Eroica California has been cancelled for 2020, you have at least 8 months to find a new ride.
This Davidson is a lugged steel bike in keeping with Eroica standards, may be late 80's but still similar in style, I think the Dura-Ace groupset is better than the Gipemme, but it is newer and still styled correctly. Depending on the brake levers you can keep aero brakes, but of course, you may have to modify the stem, seat if the fit is not to her liking. Would need to get toe-clips which isn't hard. Modification of the gearing would be important though unless she's a very good climber.

This Bridgestone RB-1 is quite small so may not fit but has much of the gearing mods and still retains the classic look even though built in the late 80's early 90's.
