Trek Fx Sport 5 vs Specialized Elite Carbon
Which is better? Looking to get a new bike, and wanted a bit more of a gravel tyre and not a straight road bike reason I'm deciding between these two

They seem to be very similar quality. I like that the Trek bike has a Shimano crankset, shifters, and brakes, but according to their webpage, it costs about $500 more than the specialized. Also the frame has their 'Isospeed decoupler', which I have heard good things about. But $500 more?
Bot bikes come with decent tough flat protective tires, but swapping either to a lighter or more supple tire will make them faster.
In the end, you will be happy regardless of which one you choose. Pick the one you feel more comfortable on, or the one from the shop you like better.
