I like these tires (https://www.jensonusa.com/Schwalbe-G...ound-700C-Tire) but a) I'm not about to go tubeless, and b) I will barely have clearence for 32mm tires. I like the versatility of this tire, and also very much like the look of those uniform nubs.

Any recommendations?

Supposedly fast rolling. They come in a 32mm

I have been thinking about them for my cross bike. My hesitation is how long the tread pattern holds up since it's only .5 mm deep

I mean they might wear a slick line down the middle quickly making them faster and keep the pattern on the sides for cornering

Anyway...maybe it's what you are looking for.

If you "barely have clearance" for a 32mm, methinks you may want to go a little smaller than that to allow clearance for mud, twigs, gravel, and anything else the tread knobs will pick up.

THe G-ONe Speed is in 30mm, but with small nubbs.
Panaracer Gravel king makes a direct competitor in various sizes, but it has a file tread pattern.

Realistically though, you will need a 28mm tire if 32mm is too tight.

When I say that I 'barely have clearence' I am accounting for some rubbish and truing shortfalls. I could roll a set of true 35s no problem.

I have those tires in 38 on my gravel bike. Yes, tubeless. But I’ve have six punctures that I know about, and I’ve never even dismounted them. The sealant has taken care of them. They are a decent tire for mixed surfaces. I’ve ridden them plenty of times with my club (road) rides and did not feel like I was giving up too much. Ok on fire roads and other dirt. Squirrelly in sand, but then what isn’t?

Those are actually an ebike tyre.

They come in 30-622, which should work for you.

That is funny. I can tell you don't own a pair. The are not an ebike tire (irregardless what the marketing dept tells ya). You'll tear them up in no time with an ebike. They wear very fast just under human power. Also, The "G-One speed'" is a bit different from the standard G-one. The "speed" is a slick; He basically stated he didn't want the slick (unless I misunderstood?)

They are some of the best tires I've ridden. Very low rolling resistance. You don't need to run them tubeless (I've run them both ways). If you have room for 35's, then get these in the 32mm size.
