The worst: tire manufacturers that don't let you browse their website by size
It's tough enough these days, but that much moreso if you still ride 26. Or have a certain width in mind..
I'm finding that it's an exercise in patience trying to figure out what's on offer from the major makers these days. This morning I went to schwalbe, wtb, panaracer, maxxis, all of their websites forced me to bounce around their entire lineup like a paparazzi trying to figure out whether I can give them my money or not 🙂
There must be a better way!

Any recommendations for something supple that is about 2 to 2 and a quarter wide, meant for pavement (or gravel, I guess) but has *some* knobbage? I like to still be able to turn/stop on wet grass. Thanks!

I like to stick my parameters into Google and see what pops up.
You might look at some of the Maxxis tires. It looks like they may have several offerings that might be of interest.

I usually download their catalog pdf. Both Schwalbe and Continental have a few pages in their catalogs dedicated to exactly what you're looking for. I agree with you though. It's easy enough for them to have these pages viewable online.

Schwalbe has previously let me search by size. I don't know why they would have changed this aspect.
EDIT: and I still can. You can search by tire size on the Schwalbe site. I don't know why you couldn't find it.

I'm pretty certain that the many people who produce websites don't think things through. Many websites seem cluttered as if produced by high school kids.

You can search for exact size like 40-599 but not all 26" tires whatever width.

Maxxis tires has a 'tire finder' button on the top right that lets you search by wheel size..... and I have a new appreciation for Maxxis after starting BMX, they've gone back and forth with the 'overdog' tire with Tioga.
Maxxis Pace looks like it might meet your requirements - they've got a large selection in any case.
