Trek 520 as a gravel bike?

Trek 520 as a gravel bike?
Hello guys,
I'm new to cycling, i like road biking and touring. I started doing some gravel riding and I like it even more, it's awesome. I want a bike that I can comfortably tour with, but is also solid on gravel and going slow on single trail.
I've been looking at the Surly Straggler, Cross check and the Soma Wolverine. The price point is a tad too much for me though. Then I realised that my dad has a 2007 Trek 520 that is still in fantastic condition.
My question is, would you guys consider converting a Trek 520 into a gravel bike? I understand the geometry will never be perfect, and the clearance a bit wanting. I've seen photos of people swapping out the forks to put 40's in, but I would be happy with 35's or 37's.
I am thinking of putting some salsa cowchipper bars on it, keeping the bar end shifters and going with fatter tires. Stupid idea? What do you guys think?

Sure, why not?
Tire size wont be as wide as what i like, but gravel around me is different than gravel in other areas.
If it fits, have a blast. People ride endurance road bikes with 32s on gravel, so a 520 isnt some crazy option.

I've put 28 slicks on my road bike. On dry, nice gravel roads and fire trails that's okay, if a bit stiff. If it's a little bit wet though it becomes a nightmare; I end up carrying it.

For me 35s would not be enough. For your riding they might work fine?
